Why is it good for your mom?
Walnuts are super high in omega 3 fatty acids, antioxidants and help you to deal with stress – and even reduce the risk of breast cancer. Eating nuts in general helps you to stay happier and less stressed. According to research studies, people who regularly snack on nuts can also maintain their weight better.
Blueberries are just a boost of antioxidants and help to fight off diseases.
Coconut oil has a bad reputation, but it actually has amazing benefits! Its medium chain fatty acids help to speed up your metabolic rate and help with weight loss. It also aids to reduce inflammation.
Lavender oil (make sure you take high grade essential oil that you can take orally) is soothing and helps to keep a mother's nerves at bay.
How to prepare
- 1⁄3 cup dates
- ½ cup walnuts
Put all in a food processor until the pieces have the size that you like and press nicely into a crust/base form. We used silicon cupcake cups but you can also use baking sheets layered on a muffin baking tray.
- 1 ½ cup cashew nuts (soaked over night or at least 4 hours)
- 1 cup blueberries (fresh or frozen)
- ¼ cup coconut oil
- ¼ cup agave syrup
- 1 tbsp lemon juice
- 2 drops lavender oil
Put all in a blender and blend till super smooth. When ready, pour the filling over your crust and put it in the fridge to cool. We would recommend at least 2-4 hours in the fridge for the cake to set well.
Then serve and enjoy.
