It’s packed with fragrant Asian flavours yet super easy to make! Did we mention it’s gluten-free too?
Baked Asian Trout en Papillote With Quinoa Salad
Gluten-free
Ingredients:
For the trout:
- 1 fillet trout
- 2 kaffir lime leaves, shredded
- 1 chilli padi, sliced
- 1 bunch cilantro
- 1 lime, sliced
- Salt & pepper, to taste
For the quinoa salad:
- 1 cup cooked quinoa
- 5 kacang botol (four-angle bean), sliced
- 1 tbsp desiccated coconut
- 1 bunch cilantro, chopped
- 1 tbsp coconut oil
- 1 tbsp lime juice
- Salt & pepper, to taste
Method:
- Preheat the oven to 200°C. Season the trout with some salt and pepper, then top with the kaffir lime leaves, chili padi, cilantro and lime slices. Wrap up in foil so that it is completely sealed and the fish can steam in the juices. Put in an oven and bake for 10-15 mins.
- Toss the cooked quinoa with all of the remaining salad ingredients and mix till everything is well covered. Enjoy with the steamed trout.
