Homemade Peanut Butter Coconut Bars

These peanut butter and coconut granola bars are chock full of goodness and taste oh-so-good! You may be used to getting your granola bars from a store but exactly how healthy are they? Have you actually taken a closer look at the list of ingredients?

The upside to making your own granola bars is knowing what goes into them. And don’t be surprised if you start whipping them up all the time; once you get a taste of the good stuff, the store-bought ones just don’t make the cut anymore.

Try the recipe below for a start.


  • 1½ cups organic oats
  • ½ cup fresh grated coconut
  • 1 cup dates (preferably medjool or kurma)
  • ¼ cup peanut butter
  • ¼ cup honey (rice malt syrup/maple syrup for vegan option)
  • 1 cup almonds, roughly chopped
  • ½ cup dried cranberries


  1. Preheat the oven to 220°C (425°F). Evenly sprinkle the oats on a baking tray and bake until the oats are golden brown. Toss occasionally so the oats cook evenly.
  2. Once the oats are done, do the same with the coconut. Also to be baked until golden brown.
  3. Process dates in a food processor. Add a little water. You want the dates to form a dough-like consistency.
  4. In a bowl, add the oats, coconut, almonds and cranberries.
  5. Over a low heat, warm the peanut butter and honey. Pour over the oat mix. Mix the ingredients thoroughly, make sure there are no chunks.
  6. Transfer the mixture to an 8x8 baking tin lined with baking paper. Press the mixture firmly down.
  7. Place in the freezer to set for at least an hour.
  8. Remove from freezer and cut into squares. Best to store in freezer or fridge.
