The current heatwave calls for something cold and refreshing. While hydrating our system with water goes without saying, it’s also soothing to have cold foods such as nice creams. This recipe is really simple and does not compromise on the taste.
I love the bit of saltiness that stings the mouth with each spoonful. With the addition of protein powder, it can also work as a great post-workout food that’s deliciously creamy.
Ingredients
- 1 cup thick coconut milk
- 1 cup blueberries
- 1 scoop vanilla protein powder
- A pinch of salt
- Honey to taste
Method
- Blend all ingredients.
- Pour into a tray.
- Freeze for about four hours or until set, and serve.
Note: Top it with anything crunchy. I’ve used raw cacao nibs here.
