Avocado toasts have been rocking the online waves with no signs of slowing down. In fact, it has become somewhat mainstream. What’s the hype you might ask? It is pretty much just sliced or mashed avocado placed atop a piece of toast – nothing fancy-schmancy, right? Wait till you take a bite, then you’ll understand why so many are raving about this open-face toast!
It is so easy to prepare, keeps you full and can be enjoyed anytime of the day, really. Brekkie, brunch, lunch, snack, dinner or if you’re just looking for another reason to eat that avocado lying on your tabletop. This creamy fruit packed with healthy fats is often priced a tier above the rest of your local fruits so make every avo-toast count!
It all begins with toasting your bread (choose from multigrain, sprouted grain, whole wheat or gluten-free versions) in the oven or toaster. Top with ripe avocado slices or mashed avocado. Each slice of bread will only require half an avocado. Eat, repeat and enjoy!
The classic, no-frills version is the simplest. Here are seven ways you can take your avocado toast to the next level - all under 15 minutes! There’s something for every palette here; from savoury to fruity. Vegans can select from those indicated with a (V). Bon appetit!
Walnut-Pear-Cheese Avocado Toast

You’ll need: Walnuts, cinnamon, avocados, pinch of salt and pepper, toasted bread, a thinly sliced pear, honey and crumbled blue cheese.
How-to: Spread the smashed avocado over your toast, layer the pear slices and crumbled cheese over then sprinkle the toasted cinnamon walnuts and finish with a drizzle of honey. Insanely delicious and filling, too!
Smoked Salmon Avocado Toast
You’ll need: Thinly sliced smoked salmon, Greek yoghurt, freshly squeezed lemon juice, ribboned cucumber, alfafa sprouts, avocado, pinch of salt and pepper, toasted bread, finely diced tomatoes, finely chopped mint, chili flakes.
How-to: Mix the finely diced tomatoes, mint, lemon juice and chili flakes together to make the dressing. Mash the avocado with a dollop of Greek yoghurt and lemon juice then season with salt and pepper as needed. Slather the avocado over the toast, add the smoked salmon slices, cucumber and spoon over the dressing and alfafa sprouts. Delish way to get your omega-3s in your day!
Eggs On Avocado Toast

You’ll need: Egg, avocado, toasted bread, extra virgin olive oil, a pinch of salt and pepper, chili flakes or curry powder, sprigs of chives, lime, toasted pumpkin seeds.
How-to: Fan out the avocado slices over the toast. Drizzle some olive oil, a squeeze of lime and a pinch of salt over that. Smash a soft-boiled, poached egg, scrambled or your favourite way of getting your eggs done (did I mention that I love runny yolks?) on your avocado-coated toast. Sprinkle with some chili flakes or curry powder (as you fancy), chives and toasted pumpkin seeds. Absolute yums!
Corn + Beans Avocado Toast (V)
You’ll need: Fresh corn kernels, olive oil, unsalted butter, salt, pepper, avocados, kidney beans, white beans lime, toasted bread, finely chopped fresh cilantro.
How-to:Boil the corn (and butter it lightly – this is optional). Mash the avocados with salt, pepper and lime juice to taste. Spread the mash evenly on the toast and top it with few spoonfuls of the corn, beans, cilantro and a spritz of lime. A vibrant Mexican start to your day!
Chips and Salsa Avocado Toast (V)

You’ll need: Ripe tomatoes, fresh coriander, onion, green chillies or jalapeno, garlic, limes, extra virgin olive oil, salt, pepper, avocados, toasted bread, tortilla chips.
How-to:To prepare the salsa, simply mix the finely chopped tomatoes, coriander, onion, green chillies, garlic together with the lime juice and extra virgin olive oil and serve immediately or allow it to sit for the flavours to develop. Smear the toast with the mashed avocado, top it with salsa and drizzle crushed tortilla chips over – a spicy, crunchy and creamy blend of flavours!
Dried Figs & Almonds Avocado Toast (V)

You’ll need: Dried figs, raw or roasted almonds, avocados and toasted bread.
How-to: Slather the mashed avocados on the toast. Then arrange the slices of dried figs and sprinkle chopped almonds over this. A fiber-rich and energising combo! Go ahead and experiment with other nuts and seeds!
Fruity Avocado Toast (V)

You’ll need: Seasonal fruits, avocados, toasted bread and feta cheese (optional).
How-to: Spread the mashed avocado on the toast then top with your favourite slices of fruits or even whole blueberries. If you’d like, sprinkle some crumbled feta over! The juice from the fruits will pair nicely with the sharp tang of feta – makes a lovely, light snack!
