Date Smoothie

Serves 2

Ingredients:

  • 2 medium banana
  • ¼ cup dates, pitted
  • 2 cups non-dairy milk (almond, rice, oat, coconut)
  • 1 tsp chia seeds
  • ½ tsp cinnamon
  • Pinch of sea salt
  • 3-4 ice-cubes

Method:

  1. Combine all ingredients in a blender until smooth.
  2. Serve with a sprinkle of cardamom.

 

Chocolate Truffle Date Balls

 

 

Ingredients:

For the Truffle Balls

  • 1 cup raw pecans/almonds
  • 1 cup raw hazelnuts
  • 3/4 cup raw cacao powder
  • 5 tablespoons hazelnut/almond butter
  • 1/2 teaspoon sea salt
  • 1 teaspoon ground cinnamon
  • 20 Medjool dates, pitted (if dried, soak in warm water for 10 minutes then drain)

For the Chocolate Sauce

  • 4 tablespoons coconut oil
  • 2 tablespoons raw cacao powder
  • 2 tablespoons coconut nectar
  • A pinch of salt
  • 1 tablespoon chili powder

For the Topping

  • ¼ cup cacao nibs, crushed hazelnuts/almonds and sea salt
  • Raw cacao powder for dusting

Pomegranate & Date Quinoa Salad

Serves 4

Ingredients:

  • 1.5 cup quinoa
  • 1” ginger, peeled and sliced
  • ¾ cup dates, pitted and chopped
  • ½ cup pomegranate seeds
  • ¼ cup walnuts
  • Juice of half a lemon
  • 2 tbsp olive oil
  • ¼ cup parsley, coarsely chopped
  • Himalayan / sea salt & pepper

Method:

  1. Rinse the quinoa.
  2. In a pot, bring 3 cups of water to the boil and add in the quinoa and ginger. Turn down the heat and cover the pot. The quinoa will be cooked once all the water has evaporated.
  3. Transfer the quinoa to a big bowl and fluff with a fork.
  4. Add in the remaining ingredients. Mix well.

Dates with Nut Butter

Ingredients:

  • Dates
  • Nut butter (peanut, almond, cashew, Brazil, hazelnut)

Method:

  • Remove the pits from the dates, make sure you don’t break the dates in half.
  • Fill the dates with a nut butter of your choice.

Bliss Balls

Makes 12 to 15 balls

Ingredients:

  • 1 cup medjool dates, pitted
  • ½ cup almonds
  • ½ cup cashews
  • 2-3 tbsp cocoa powder
  • 1/3 cup coconut oil
  • 1/3 cup toasted coconut
  • Pinch of salt
  • 2 tbsp flaxseed
  • 1 tbsp chia seeds
  • Sesame seeds / coconut for rolling

Method:

  1. Soak the almonds and cashews for 1-2 hours. Drain the water.
  2. Place the soaked nuts in the food processor and blend until the nuts are crumbly.
  3. Add the remaining ingredients and blend until you get a doughy consistency.
  4. Scoop out a small amount, approximately half a tablespoon, and roll into a ball.
  5. Rolls the balls in sesame seeds or coconut.
  6. Set in the fridge for 4 hours. Keep refrigerated.
