Tabbouleh is a Mediterranean salad with the following ingredients – bulgur, cucumber, tomato, onion and parsley. These combined make a scrumptious and nutritious salad.
Although there are many variations to this salad, the below is my simplified version. I also sometimes substitute the bulgur with quinoa, which is what you can do, too.
- ½ cup fine bulgur/quinoa
- 1 cucumber, deseeded/cored and diced
- 2 tomatoes, chopped
- 2 onions, chopped finely
- 1 green chilli (as desired)
- 1 to 1.5 cups parsley, chopped
- 2 tbsp lemon juice
- 2 tbsp olive oil (as desired)
Add all the above ingredients in a salad bowl and toss well. You could add a few mint leaves (chopped) for extra flavour. And that’s it!
Note: You can also prepare Tabbouleh a day in advance as leaving it to sit in the fridge overnight will allow the flavours to develop even more.
