Raw Vegan Samosas? You Heard Right! Perfect For A Healthier Ramadan

I’ve been wanting to develop a raw vegan samosa recipe for sometime and since Ramadan is coming up, this is the perfect time to make some.

Traditional samosas are deep-fried, however this version is much healthier as we’re using the dehydrator to “cook” the wrappers.

Instead of potatoes, I’ve decided to use cauliflower as it has a similar consistency to mashed potatoes if you process and flavour them well. I’ve added corn, tomatoes, celery in the filling to include various colours and textures. Enjoy!

 

Recipe: Raw Vegan Samosas

Samosa Wrapper

Ingredients

  • 2 tbsp Flaxseeds
  • 5 Japanese Cucumbers, peeled and roughly chopped
  • 1 red chilli, sliced
  • Juice of 1 Calamansi Lime
  • 3 tbsp Coconut oil
  • 1 inch tumeric roor, sliced
  • 1 tbsp curry powder
  • 1 tsp organic salt

Samosa Filling 

Ingredients A:

  • 1 cup cauliflower florets
  • 1 sundried tomato, sliced
  • 20 curry leaves, chopped
  • ½-inch ginger root, sliced
  • ½ clove garlic, minced
  • ½ tbsp coconut oil
  • Juice of 1/2 calamansi lime
  • ½ tsp miso paste
  • ½ tbsp curry powder
  • ¼  tsp organic salt

Ingredients B:

  • 2 tbsp tomato, small dice
  • 2 tbsp fresh corn kernels
  • 2 tbsp celery, small dice
  • ½-inch ginger root, sliced
  • 2 tbsp yellow onion, small dice
  • 2 tbsp chopped coriander leaves
  • 1 tbsp chopped spring onions
  • Juice of 1 calamansi lime
  • Freshly ground black pepper to taste

 

Method

Samosa Wrapper

    1. Grind flaxseeds until into a fine flour. Set aside.
    2. Place remaining ingredients into a food processor or blender and process till smooth.
    3. Add in flaxseeds and process till well-combined.
    4. Spread mixture evenly onto a non-stick dehydrator sheet and dehydrate for 6 hours at 45 degrees Celsius or until you’re able to peel it off. Dehydration times will depend on the temperature in your room.
    5. Cut wrappers into strips.

Samosa Filling  

      1. Add Ingredients A into food processor and pulse until you achieve a crumbly texture. Place mixture into mixing bowl
      2. Add the remaining Ingredients B into mixing bowl and mix till well combined.

 

Assembly  

      1. Place filling onto wrapper strips and fold into triangles.
      2. Serve immediately.
