FAST FOOD! 5 Ways to Feed Your Family in Less Than 30 Minutes

However organised we are, there are always going to be those times when the need to feed catches up with us. Those little mouths need to be fed and hungry little humans tend to be the least patient!

Rather than defaulting to processed packets in panic, it’s great to have a few no-fail solutions in your toolkit. Here are some great choices; tried and tested by the PurelyB mums. We all use ingredients you are likely to have and most can be frozen in batches. Right, the clock is ticking… GO!

1. ARIBA! Super Speedy Chicken Tacos (serves 4)


  • 3 chicken breasts, skinless
  • 2 cloves garlic, minced
  • 3 tbsp olive oil
  • Juice of 1 lime
  • ¼ tsp cumin powder
  • ¼ tsp paprika
  • Salt and pepper
  • 1 cup cheddar cheese, grated
  • ½ cup sour cream
  • 1 avocado, mashed
  • 2 cups lettuce, chopped
  • 1 cup tomato, chopped
  • 6 flour tortillas, warmed


  1. Cut the chicken breasts into strips and place in a bowl. Add the garlic, olive oil, lime juice, cumin, paprika, salt and pepper.
  2. Set a pan on medium heat, and pan-fry the chicken strips.
  3. Fill the tortilla with chicken, lettuce, tomato, cheese, avocado and sour cream. Fold in half.

Warp Speed Tip:

Buy extra chicken, marinate it and store in Ziploc bags in the freezer. Ready the next time you need to whip up a quick dinner.

2. QUICK CREAMY COMFORT! Mushroom Stroganoff (serves 4)


  • 4 cups mushrooms, thinly sliced
  • 1 onion, chopped
  • 1 clove garlic, chopped
  • 4 tbsp olive oil
  • 1 tbsp parsley, chopped
  • 1 vegetable cube
  • 1 tbsp flour
  • 4-5 tbsp sour cream
  • 1 tsp lemon juice


  1. Set the rice or pasta to cook.
  2. Set a pan on medium heat and pour in the oil. Add the onions and garlic and fry until soft. Add mushrooms and vegetable cube. Cook for about 8 minutes.
  3. Add 1 cup of water and bring to a gently boil. Add the sour cream, lemon juice and parsley. Season with salt and pepper.

Warp Speed Tip:

If you’re in a real rush and can’t cook the rice or pasta, this is delicious served on toast.

3. FISH IN A FLASH: Sticky Salmon Skewers (serves 4)


  • 200g of skinless salmon fillet
  • 2 tbsp soy sauce
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 1 tbsp honey
  • Selection of “skewerable” veg – eg cherry tomatoes, courgettes or mushrooms
  • 4-6 wooden skewers


  1. Heat oven to 220°C/425°F or gas mark 7.
  2. Combine oil, soy, honey and vinegar in a bowl.
  3. Cut the salmon into cubes and your chosen veg into “skewerable” shapes, coat with the marinade and skewer. Leave for as long as you’ve got – 10 minutes is fine.
  4. Roast in the oven for 10–12 minutes, whilst boiling the remaining marinade until thickened.
  5. Serve skewers on plates and pour the sauce over.
  6. This is great with salad, pasta, rice, noodles – anything you’ve got.

Warp Speed Tip:

If you get the chance, marinate fish and veggies in the morning and leave in fridge in Ziploc bag until you are ready to skewer!

4. PRONTO PASTA SAUCE – with undercover veggies (serves 4)


  • 200ml Passata
  • 1 small onion, chopped
  • 1 garlic clove, crushed
  • 200g of assorted vegetables (e.g. grated carrots, courgettes or eggplant or sliced mushrooms)
  • 250ml water with vegetable stock cube
  • 1 tbsp cream cheese

Optional: fresh basil leaves, 1 tsp balsamic vinegar and/or brown sugar


  1. Heat the oil and sauté the onion, garlic and chosen veg for 5–6 minutes until soft.
  2. Add passata, stock (+ basil, vinegar and sugar if using) and boil for 15 minutes.
  3. Whizz up the sauce in a blender and stir in cream cheese. Serve with any pasta you have.

Warp Speed Tip:

This sauce can be made in giant batches and frozen in bags or ice cube trays for emergency use whenever you need it.

5. CRAZY BOLOGNESEY: The most versatile base in town (serves 4)


  • 250g lean minced beef
  • 1 onion, chopped
  • 1 garlic clove, crushed
  • 400g can of chopped tomatoes
  • 200ml beef or vegetable stock
  • 100 ml apple juice
  • 1 tbsp tomato puree
  • 1 red pepper, deseeded and diced
  • 1 tbsp olive oil


  1. Heat oil in pan and fry onion, pepper and garlic for 2 minutes until softened.
  2. Add mince and cook until browned.
  3. Add stock, tomatoes, puree and apple juice and simmer for 20 minutes.

Warp speed tip:

It’s always worth having a batch of bol in your freezer. Once you have your “bolly-base” you can serve on spaghetti or any other pasta, top with mashed potato or layer with lasagna sheets and crème fraiche.
