Chickpea Tofu

What do you get when you mix chickpea flour and water, and heat it up? Delicious chickpea tofu. Filling, tasty, easy to cook, inexpensive and a great plant-based protein - add it on to complete any meal.

Ingredients

  • 1 cup chickpea/gram flour

  • 3 cups water

  • 1 teaspoon salt

  • 1/2 teaspoon ground turmeric

  • 1/2 tablespoon oil

Instructions 

  1. In a saucepan, mix in the chickpea flour with 1 cup of water, turmeric and salt. Whisk until it all dissolves and the mixture is smooth.

  2. Add in the remainder 2 cups of water, stir and cook the mixture over a medium heat, bringing it to boil. Reduce the heat to low and stir constantly for another 2 minutes or until the liquid thickens.

  3. Transfer the mixture onto a tray to cool. Once cooled, cover the tray and place in the refrigerator to set for a minimum of 2 hours.

  4. Cut it up into the desired portion size and cook the chickpea tofu as you would soy tofu – steamed, fried, etc.  and serve up to your desire.

Note: We're after a firm yet jelly-like consistency. You'll notice the water drain out of the tofu, this is normal. The tofu will get firmer as the moisture is drawn out.
