Somewhere in between a muffin and banana cake, these tea cakes are delish and healthy.

I make these cakes whenever I’m left with way too many ripe bananas. It’s refined sugar-free and is a baked goodie that’s nutty, toasty and comfy for a morning or evening tea with friends. It also works great as a pre-workout snack. The kids will love this, too!

Nutty-Banana-Choc Tea Cakes

Ingredients:
  • 1 cup oats
  • 2 ripe bananas, mashed
  • A few tablespoons almond milk
  • 1 teaspoon ground cinnamon
  • 1 tablespoon maca powder
  • ½ teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 2 tablespoons pure peanut butter
  • A handful dried cranberries
  • A handful roasted hazelnuts, roughly chopped
  • Some 80% dark chocolate, roughly chopped
  • A pinch of sea salt

Method:

  1. Preheat oven to 180°C.
  2. Mix all ingredients and scoop mixture into a muffin pan.
  3. Bake for 15 minutes.
  4. Let the cakes cool before serving.

Note: Please adjust the ingredients accordingly if the mixture is too soft. It should hold like a thick cake batter.
