For those of you who dread cooking, this Raw Zucchini Spaghetti with Pesto is a delicious and easy alternative to even the simplest of pasta recipes!
As it only uses raw ingredients, there’s no real cooking involved but the end result is nothing to scoff at. Packed full of goodness, it’s a dish that will appeal to both children and adults. And ‘zoodles’ are a great way to sneak some raw veggies into your children’s diets.
- Wash the zucchini ,peel and spiralize or grate (depending on which tool you have at home) to produce zoodles.
- Combine the basil, garlic and nuts in a food processor and pulse until finely chopped. Then add the olive oil, lemon juice and salt and pepper to taste. Continue to blend until mixture is smooth.
- Put your zoodles on a plate, top with pesto and garnish with cherry tomatoes (optional).
- Enjoy without guilt!
If you want to store the pesto in the refridgerator, make sure you put it into an airtight container, putting some olive oil on top of the pesto - this way it will last longer.
