Dips or dressings have a way of turning a bowl of anything into something more appetising and soulful.

This clean and raw dressing is a huge favourite of mine. It mimics the flavours of the dip in the local fruit rojak. Sweet, sour and spicy - it can send your taste buds into a frenzy. It’s also packed in nutrition from the dates as its base. I love it with a bowl of cucumber, water chestnuts, pineapple and guava but it goes well with green salads too – mix and match as you please.


  • 4 pitted Medjool dates, soaked for a few hours
  • Juice of a lemon
  • 1 tablespoon olive oil
  • 1 teaspoon chili flakes
  • 1 teaspoon sesame seeds
  • Pinch of salt and pepper

Blend all ingredients. Taste as you go along and adjust to achieve your desired flavour balance.

Note: If you need to balance the sweetness and have run out of dates, honey and agave nectar would do just fine.
