Breakfast jars are really one of my favourites. Not only are they easy to make, but they are fun to put together because there are so many ingredients you can use and different combinations you can do to cater to your taste buds!
They are also time saving and convenient as you can make them the day before and grab one from the fridge in the morning before you rush out the door. Making these brings out your creativity and I love it when people asked me what I am eating, as I am often seen carrying one after my gym workout.
Although these are called breakfast jars, you can eat these anytime of the day as they make perfect snacks as well as guilt-free desserts. The main thing to master, is how to make the base – the chia pudding. Once you get this, you can experiment with different flavours for the pudding and all sorts of toppings. The Base - Chia Pudding
Ingredients (2-3 serves):
- 2 cups fresh coconut milk
- 5-6 tablespoons chia seeds
Method:
- Pour the coconut milk into a jar and add the chia seeds. Give it a good stir so the seeds do not clump together.
- Place in fridge to set overnight. You can leave it to set for a couple of hours, but overnight will really allow the chia seeds to expand and you get a really nice pudding consistency.
Here are three variations you can start with:
Blueberry Bliss
Ingredients (1 serve):
- 1 cup chia pudding
- ½ cup granola
- ½ cup blueberries
Method:
- Layer the ingredients in a jar, starting with the chia pudding, then granola and lastly the blueberries.
Mango Magic
Ingredients (1 serve):
- ¾ cup chia pudding
- 1 small mango, diced
Method:
- Blend the mango in a blender.
- Add the chia pudding to a jar and pour the puree on top.
Strawberry Dream
Ingredients (1 serve):
- 1 cup fresh coconut milk
- 3 tablespoons chia seeds
- 1-2 tablespoons raw cacao powder
- ½ cup strawberries
- 1-2 tablespoons pistachios
Method:
- Scoop the cacao powder into a small bowl and add a bit of hot water to dissolve the powder.
- Pour the coconut milk into a jar and add the cacao powder, give it a stir till it has blended in with the milk. Then add in the chia seeds. Give it a good stir so the seeds do not clump together.
- Place in fridge to set overnight.
- Once the pudding is set, layer with strawberries and top with pistachios.
